Mushroom Biryani

What is it?

A vegetarian biryani that uses mushrooms instead of meat.

Serves: 4

Ingredients

  1. 250 g mushrooms
  2. 2 cups rice
  3. 1 onion
  4. 1 tomato
  5. 1 potato
  6. ½ tbsp garlic paste or 1 crushed garlic clove
  7. ½ tbsp ginger paste or 1/2 inch ginger sliced thinly
  8. ¼ cup yoghurt
  9. ¼ cup oil
  10. ¼ cup biryani powder

Directions

  1. Rinse the rice until the water runs clear.
  2. Soak rice for 2 hours.
  3. Mix biryani powder in ⅛ cup water.
  4. Slice onions and set quarter aside as garnish.
  5. Fry onions in hot oil until golden.
  6. Add tomatoes and fry until water is released.
  7. Add mushrooms, garlic paste, ginger paste, yoghurt, potatoes and Biryani masala to the pan.
  8. Stir fry for 10 minutes.
  9. Turn off heat and set aside.
  10. In a separate saucepan add rice to 4 cups of water and a pinch of salt.
  11. Cook rice until water has completely evaporated.
  12. In a clean saucepan, layer half the rice, the mushroom curry and then the remainder of the rice.
  13. Cover with a lid and cook for 5 minutes on low heat.
  14. Serve with onions.

Notes

  • I use Shan's Sindhi Biryani powder. While I get mine on my annual trip to Pakistan, it is also available on Amazon if needed. However, here is an alternative if you want to make Biryani powder at home.
