My cake portfolio

Anyone who knows me, knows I suck at pies. Cookies I am ok at but cakes - I love the celebratory act of cutting a cake and seeing the people around you share a slice of cake with others cause you “cut it too large“. So here are my favourite cake recipes and ones I am looking to source to complete my cake portfolio.

This Matilda inspired cake is hard work however it is worth every minute of the 8 hours I spent baking and assembling it.

The mousse in the center is what acts as a surprise.

This gulab jamun cake is always a hit at any desi function. And the recipe comes straight from Hetal Vasavada at Milk&Cardamom.

The above three are recipes I am happy to whip out any occassion. However, there are some recipes I am still on the hunt for:

  • A good gluten free cake

  • A good vegan cake

  • A great vanilla cake with chocolate or fruit-y frosting

  • A good cake to use summer fruits - this is the best candidate
